Sour cream is produced from pasteurized cream by ripening of sourdough, which is produced on the pure cultures of lactobacillales and aroma formers. Due to lactic-acid fermentation, sour cream goes into probiotic product. It contains microorganisms, which help to fight against bowel’s putrefactive flora, to grow and proliferate beneficial bacterias.
